Shrimp Kiwi Mixed Green Salad

Easter weekend is coming up fast, which means a bunch of food and chocolate for most people. So why not plan for it and have an ultra healthy lunch or dinner tonight! It only takes 5 minutes to prepare and cook! Amazing and delicious.

Ingredients

2 cup Mixed greens
10 medium Shrimp shelled and cleaned
1 pinch Sea salt to taste
1 pinch Thai Spice Blend
1/2 tbsp Ghee
1 pinch Black pepper
1/2 tbsp Pumpkin Seed Oil
1 large Kiwi peeled & sliced
1 tbsp Goat Cheese


Instructions
Plate the organic greens and top with sliced Kiwi, pepper, pumpkin seed oil and goat cheese.

In a skillet heat ghee, we prefer using a cast iron skillet. Place shrimp sideways and sprinkle with Thai Spice Blend and sea salt, cook for about 30 seconds, flip and cook for another 30 seconds; place on top of your bed of greens.

This beautiful dish is super fast, super easy and super healthy.

    • Hello Ronel, World Market/Cost Plus sells this wonderful Thai Spice Blend (sesame seeds, chile pepper, coriander, cilantro leaf, basil, onion, red pepper, shrimp, garlic, cinnamon, nutmeg and lemon oil). I use it quite a bit on stuff because it add an ever so delicate hint of all of these spices.
