The 7 minute perfect Breakfast

We hear all the time that “I don’t have time to make breakfast” or…”I don’t know what to make”…well here is one breakfast that you can enjoy in 7 minutes or less and make often, it is that good for you.

This is a very short post, because the ingredients are that simple and quick to make. Still got reservations? …or questions? 🙂 This is one of our most favorite breakfasts hands down.

Perfect breakfast for 2 includes:

  • 1 large vine ripe tomato
  • 2 tbsp Chimichurri
  • 4 – 5 strips of bacon, Henry has more than me, of course, I have 1 – 2 strips
  • 4 – 6 cage-free eggs easy over, I have 2 eggs

We cook everything on a griddle.  Start with bacon, flip it when it begins to brown and move a side. Crack eggs into bacon grease, and carefully flip when the eggs’ whites are virtually cooked, but the egg yolks are still very liquid. Flip with two spatulas and voila. We usually do not salt our eggs until maybe at tableside, because the bacon has enough taste, but it’s your call. Feel free to split a beautiful avocado, we usually do.

While the bacon and eggs are cooking, slice up a gorgeous vine ripe tomato and top it with our fantastic Chimichurri.

    As a relative newbie to primal eating (about 2 months so far), I haven’t yet got my head around the eggs thing. I mean to say, I like eggs – a lot. But I guess I’m struggling a bit with the conventional vs paleo wisdom in terms of what is the limit on egg intake per day. Breakfast is the only meal I fail on in the creativity stakes, so eggs feature pretty highly. But I’m limiting myself on occasion (having something else, which is much less satisfactory, 2 or 3 times a week) so as not to over-egg the situation!

    So – any suggestions on total per day / total per week egg intake? I easily get through 2-4 eggs of a morning.

      To be perfectly honest, we really struggled with this as well when we first embraced Paleo. Before that we would limit ourselves to egg whites and only very occasionally a whole egg. Fast forward a year of Paleo, and we now typically have half a dozen eggs per day four to five times a week! I usually have four and Josephine just two… we feel great our blood work is stellar and our breakfasts delicious! There is plenty of research that shows how flawed conventional wisdom on egg and other dietary cholesterol and saturated fat consumption is.

  2. Alex and I eat quite a few eggs as well since we had also read that the “too many eggs” idea doesn’t hold water but we usually save them for snacks or as a breakfast-for-dinner quick meal with bacon. We’ll try adding the tomato and sauce.

    We struggled a bit with breakfast too. Alex now has 2 cups of steamed broccoli with Aidell’s fully cooked chicken apple sausage and a bowl of barely thawed frozen blueberries. We eat few processed foods but we make an exception for these sausages. They have only a few ingredients and it says no gluten, no msg and no nitrites on the package.

    I prefer 3 links of Jimmy Dean fully cooked turkey sausage, the steamed broccoli, and an orange sliced into 8ths. Broccoli in the morning took a little getting used to but I ate a bite of broccoli with a bite of sausage to make it easier. My breakfast is only 232 calories. I can add a latte with 2T. of vanilla coconut creamer and still have a very quick, filling and healthy breakfast for under 275 calories.

  3. Cooked bacon is very stable at room temp. I cook up a whole package at a time and keep it in a covered container for up to 2 weeks. I pull out the strips as needed and heat them till crispy. Makes for a fast meal.
