Some tomato soups are more involved, such as boiling your tomatoes and peeling them roasting garlic with veggies, etc. We wanted to share a very quick and simple recipe with you that you can make with very limited time, but that will satisfy every time.

- 1 tbsp ghee
- 2 tbsps sweet potato flour
- 2 cans of tomato paste
- 1/2 tsp Spices (we crushed herbs d’provence so to make them smooth)
- Sea salt to taste
- Fresh cracked white pepper (not the end of the world if you only have black)
- You may add a sprinkle of coconut sugar if you need to cut the acidity (your choice, but if you do, use sparingly and taste…)
Heat your favorite soup pot to medium heat, add ghee and sweet potato flour, stir evenly and ensure that you don’t burn the mixture. Add 1/4 liter of water and then add 2 cans of 6 oz organic tomato paste and stir until soup is smooth and begins to thicken lightly. Keep adding water slowly if needed – check to see how thick you want it.
This soup is easy, delicious and you can make it very quickly in a crunch with a busy schedule.
