Sun-dried Tomato Pan Roasted Chicken

Wondering what to make for that special someone tonight? Here is a great quick and easy recipe that’s satisfying and healthy.


Ingredients 

4 pieces Chicken Thighs skinned & cleaned
4 Shallots sliced
4 cloves Garlic sliced
3 tbsp sun-dried Tomato diced
1 tbsp Fresh Thyme
1 pinch Black pepper
3 pinches Sea salt to taste
1 tsp Chef’s Shake Blend
1 tbsp Olive oil


Instructions
Clean chicken thighs of fat and skin and sprinkle both sides with some Chef’s Shake Blend, some sea salt to taste, and of course some freshly ground pepper.

Use a 3 quart sauce pan, add shallots, garlic, fresh thyme, sun-dried tomatoes and olive oil and heat on medium – high for 3 -5 minutes. Reduce to medium.

Now move golden brown mixture to one side of the pan and place chicken in pan, then covering chicken with onions and sun-dried tomatoes. Cook on medium for 5 minutes on each side – turn on high for 30 seconds, cover and turn off for 10 minutes.

Serve with steamed broccoli and enjoy!

  1. I love the idea of this – but what can I use instead of Chef’s Shake Blend? What does that consist of?

    1. Hi Ari, we use the Chef’s Shake sometimes, but do love to make our own. It’s totally natural with no additives or sodium, just dried herbs and veggies. You can also choose your favorite herb and sprinkle some on. Here’s a link to the Chef’s Shake if you’re interested, you can buy it at most health food stores. J
