The end of summer is here and we are finally done with 110 degree heat here in our Sonoran Desert. Mangos are once again in season and are so perfect that we had to make a new recipe for salsa that is so delicious and it will keep your breath feeling fresh as it is made without onions. This salsa is just perfect to take us into a bright and beautiful fall. With its tangy and slightly sweet flavor, it’s a perfect companion for your favorite pork dish, fish tacos or party condiment. It is easy to and quick to make. Here’s what you’ll need:
- 2 ripe large mangos
- 2 – 3 inch piece of fresh ginger
- 1 1/2 cup chopped cilantro
- 1 lime (juice only)
- 1 tbsp rice vinegar
- Sea salt to taste
- 2 tbsp olive oil
- 1 Serrano pepper (finely chopped & optional)
Peel and chop mangos, finely chop ginger, Serrano pepper, and cilantro. Mix everything together into a medium size bowl and chill in the refrigerator. Take it easy on the salt at first, as you will probably need to add some more after the salsa sits in the refrigerator for some time.
